Bariatric patients often need to find ways to change up their baked chicken. Here’s one of many options I have for you!!! Yes, you are so welcome. This recipe only requires 4 ingredients but will give your typical weeknight chicken dinner a change of pace.

Chicken can be a difficult protein to tolerate (have you read about why the ‘bad stuff’ goes down so well??) SO for you to feel comfortable and tolerate a dense meat protein source, you must must must must take small bites and take pauses in between those bites! Trust me. You will be much better of! Your hunger will stay in control and your scale will get moving! (Unless you’re in a stupid stall. Let’s talk about stalls…)

Easy four ingredient recipe for a simple weeknight dinner. Pesto coated chicken with mozzarella cheese and tomatoes. Great for postop bariatric surgery patients!

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 tbsp jarred pesto sauce
  • 1/2 cup part-skim mozzarella cheese, shredded
  • 1 roma tomato, sliced

Instructions

  • Preheat oven to 375F.
  • Cover all sides of chicken with pesto sauce and place in the bottom of a 8x8 casserole dish. Top with shredded cheese and tomato slices.
  • Tent with foil and bake for 15 minutes. Remove foil and continue baking 20 minutes or until internal temp reaches 165F. Serve with vegetable of choice.
