Arugula Salad with Pears and Pepitas. Low carb and weight loss surgery friendly!

Delicious and fresh spin to the classic side salad. Mmmmm hmmmm.

Arugala Salad with Pears, Gruyere Cheese & Pumpkin Seeds

Ingredients

  • 2 cups arugula
  • 1 whole pear, sliced
  • 1 ounce gruyere cheese, thinly sliced
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp olive oil
  • 1 tbsp toasted pumpkin seeds also called pepitas

Instructions

  • Toss arugula with oil and vinegar.
  • Top with pear slices, cheese slices and pumpkin seeds.

Notes

It's recommended to pair this salad with a lean meat protein source.
