Barbecue Pork Tenderloin & Parmesan Roasted Carrots
There is something about sliced pork tenderloin that makes me feel like I’m having a fancy meal. Sometimes I bake it with garlic and balsamic vinegar, and sometimes I put barbecue sauce on it. Slice it up and “plate” it well, and it feels like a bit above the others.
I also love pulled barbecue pork in the crockpot. It’s funny how this meal will have almost the same ingredients and yet a totally different feel.
The parmesan carrots are a great compliment to this meal and the hint of cayenne pepper gives it a bit of heat. Go heavy if you like heat, and lightly if you don’t.

Ingredients
- 1 lb bag baby carrots
- 1 1/2 lbs lbs. pork tenderloin, trimmed of fat
- 1/2 cup low sugar bbq sauce
- 2 tbsp grated parmesan cheese
- 1/8 tsp cayenne pepper
- spray butter
Instructions
- Heat oven to 425. Place rimmed baking sheet in oven; heat 10 minutes. Toss carrots with butter spray. Place meat on hot baking sheet and surround with carrots.
- Bake 25 to 30 minutes or until meat is done and carrots are crisp. Brush meat with half the bbq sauce and turn the carrots after about 20 minutes.
- Transfer meat to a cutting board; brush with remaining sauce. Cover loosely with foil and let stand 3 minutes before slicing.
- Meanwhile place carrots in a large bowl and add cheese and pepper. Toss to coat. Serve carrots with meat.
