Easy Low-Carb Taco Pie
Bariatric surgery patients, what’s not to love about the protein packed punch in this low-carb taco pie?
Lean Ground Beef + Eggs + Greek Yogurt Topping (optional) = woah protein.
What I love about this recipe is not just how filling it is with so much protein, but I love the texture that so many of us miss on a low carb diet!
I love that I can cut into it with a pie server, place it on a plate and it holds it’s texture! The flavor is wonderful too- taco seasoning! Toppings can vary from diced tomatoes, to plain Greek yogurt (instead of sour cream), jalapeƱos or nothing at all!
Approximately 1/8th of this taco pie will provide 20 grams of protein and because it’s such a dense texture, it’s very filling!

Easy Low-Carb Taco Pie
Ingredients
- 1 lb 93% lean ground beef
- 1 packet taco seasoning
- 3/4 cup water
- 6 large eggs
- 1/4 tsp salt
- 1/4 tsp pepper
- 2/3 cup 2% cheddar cheese shredded
- toppings as desired picture: Greek Yogurt, Diced Tomato
Instructions
- Preheat oven to 350F.
- Meanwhile, brown ground beef as instructed on seasoning packet.
- Spread pan in the bottom of a greased 9 inch pie pan.
- In a large bowl, whisk eggs and season with salt and pepper. Pour over beef and tilt the pie pan to allow eggs to cover the beef evenly.
- Spread shredded cheese over top and bake for 25-30 minutes or until set. Remove from oven, let cool. Slice and serve with toppings as desired.
