3 Ingredient Appetizers – Feta Stuffed Watermelon Blocks

Happy week before Labor Day!!!!

It’s with anticipation that we look ahead to a long weekend. I posted yesterday about my affection for holidays that don’t consist of a whole lot. Just a relaxing day off you didn’t expect. Hopefully the laundry and errands get done over the normal weekend so Monday is a total freebie. OR if you’re like myself, you might just leave town and leave the laundry behind altogether.

In honor of Labor Day I’ve put together 3-three ingredient appetizers. The kind of appetizers that look impressive, taste delicious, require little time to prepare and are all together good for you. The kind of little noshes that don’t make you feel terrible after eating a few of them.

First up is a recipe I found at Epicurious which is full of fancy-looking things that don’t require fancy work.

Feta Stuffed Watermelon Blocks.

I sliced up my watermelon hint: my favorite way is to cut off both the ends and to allow a flat side to set it up on. Then I work my knife from the top to the bottom, turning as I go to remove all the rind. 

I cut half into chunks and put back in the fridge. I made the rest blocks and used a spoon to remove a little spot in the middle. I added low-fat crumbled feta cheese and strips of fresh basil. Bam. Three ingredients: watermelon, feta, basil. Okay fine, bonus fourth ingredient would be balsamic vinegar splashed around the top. Not required, just sayin’

It was delicious and only slightly messy requiring a paper towel on standby for drips of watermelon juice. But, this is not different than any other of my watermelon consuming activities. Enjoy!

Ingredients

  • 4 (1 oz) blocks seedless watermelon
  • 2 tbsp fresh basil, chopped
  • 2 oz low-fat feta cheese crumbles
  • balsamic vinegar for drizzling

Instructions

  • Cut watermelon into squares. Remove a small portion from the middle.
  • Add feta crumbles to the center.
  • Add strips of fresh basil (and balsamic vinegar if desired)
