Basil and Garlic Grilled Chicken

 
Basil Garlic Grilled Chicken. Simple recipe with lots of fresh flavor! Perfect after weight loss surgery.

 

You’re only four ingredients away from a very delicious grilled chicken dinner. After weight loss surgery such as the Gastric Sleeve or Gastric Bypass surgery, it’s difficult to keep variety in your meals. If you find yourself eating too much grilled chicken you’ll soon be burnt out and reaching for anything else.

I’m a big supporter of keeping variety in your diet. That doesn’t have to be difficult! This recipe takes grilled chicken to a fresh and delicious place with the help of chopped basil leaves. I sliced up the leftovers and used them for lunches for the week (tossed it over romaine with light caesar dressing).

Basil and Garlic Grilled Chicken

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 bunch fresh basil leaves, chopped (about 4 tbsp)
  • 2 cloves garlic, pressed or minced
  • 5 sprays olive oil spray
  • 1/2 tsp salt & pepper and extra to taste

Instructions

  • Heat an outdoor grill or indoor grill pan to medium heat.
  • Meanwhile, combine the basil, garlic and 1/2 tsp each salt and pepper. Pat the chicken dry with a paper towel and spread basil mixture over both sides of chicken.
  • Spray grill or grill pan with olive oil/cooking spray.
  • Grill for 6 minutes per side or longer depending on thickness. Use a meat thermometer to ensure internal temperature is 165F.
