This bariatric friendly salad is full of fresh flavors and a fast recipe to enhance any lean protein entree!

This is the recipe for the amazing Lemon Vinaigrette – highly recommend taking the time to make this for your salad! But if you are short on time you can certainly substitute a reduced fat bottled vinaigrette.

I love the flavor of the fresh basil in the midst of a fairly basic salad. The entire kitchen smells healthy! If you’re lucky, you may have even grown your own basil :) I’ve only done that successfully once in my life so I have no shame in buying my fresh basil or having a friend give me some of hers. Those are the best kind of friends, am I right??

Basil Tomato Tossed Side Salad

Ingredients

  • 4 cups green leaf lettuce
  • 3 tbsp fresh basil, torn
  • 2 cups grape tomatoes, halved
  • 2 oz shredded parmesan cheese
  • lemon vinagrette recipe linked above

Instructions

  • In a medium bowl, toss lettuce and basil. Top with tomatoes, parmesan cheese and lemon vinaigrette.
  • Toss and serve.

Notes

Pair with a lean protein entree.
