It never stops amazing me how many uses I have for The Laughing Cow Cheese products in my kitchen. When they sent me samples to create meals with, I forgot the assignment was more focused on breakfast and created a few other meals instead! Once I took the time to read more, I made a delicious egg cup recipe.

I’ve made several varieties of egg cups to make busy mornings easier. You might also call these mini frittatas…which makes you sound sophisticated! I create them with anything from mushrooms and swiss to turkey sausage and cheddar.

This time around I used orange bell peppers, turkey bacon and The Laughing Cow Cheese®. Take a wedge of Laughing Cow and divide it into about 4 hunks. Place the hunks in the egg cups and you will love the creamy texture added to your morning eggs! They are relatively simple to make, reheat well and are wonderful with salsa :)

Breakfast Egg Cups with Laughing Cow Cheese

Ingredients

  • 1 orange bell pepper diced
  • 6 strips turkey bacon cooked, diced
  • 8 wedges Laughing Cow Cheese white cheddar or light swiss
  • 8 large eggs or 12 medium

Instructions

  • Preheat oven to 350F.
  • Crack eggs in a bowl and whisk. Add finely chopped bell pepper and turkey bacon crumbles. Pour into a greased 12 cup muffin pan (I used stoneware and sprayed lightly with oil).
  • Add "hunks" of The Laughing Cow Light White Cheddar Cheese to each muffin cup.
  • Bake for 30 minutes. Remove and serve or store and save for later!

  4. Steph, Could these be frozen after baking? If they can be about how long should they be microwaved? Thanks for your wonderful site. It is like a life saver for me!

  5. I haven’t frozen them yet but would be excited to hear from you if you try it! They re-heat well in the microwave after refrigeration. I’ve found 30 seconds per cup usually works. Thanks for following and for the positive feedback!
