It’s not everyday I post a dessert recipe. Oh, you noticed?? Well this time of year! It’s always a good idea to have a smarter alternative to the real deal. And I LOVE pumpkin. (Ahem, pumpkin dip? Pumpkin chili? Yep.)

I actually served this in wine glasses for a fun treat, but pictures don’t do so well in clear glasses. I didn’t leave it in the fridge long enough to know just how well it will set, but I imagine it would do well (although softer than a true cheesecake.)

Crustless Pumpkin Cheesecake

Ingredients

  • 8 oz fat free cream cheese
  • 1/2 cup canned pumpkin
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 8 oz light whipped topping

Instructions

  • In a mixing bowl, cream together cream cheese, pumpkin and spices. Mix on high until well blended.
  • Fold in light cool whip until well blended. Pour into a pie plate or individual dishes and let chill in the refrigerator for a few hours to set.

  2. I made this last night to take to Thanksgiving dinner at my In-law’s. I tested it on my husband and my dad, both loved it! My dad said ” I’ll bet that is full of bad stuff”! lol!

  3. OOHHH was this a good one. I tried another sugarfree recipie yesterday that was a nasty tasting flop. This really has that cheese cake taste. Yum
