Do you have that one new that instantly reminds you of a favorite memory? Pot Roast is one for me. When I was a kid we would go to church with my grandparents and show up to their house for a magical pot roast lunch with perfectly tender veggies. I would walk in to the aroma that could only be described as Love. Fast forward to the twenty first century were things move a bit faster and we are use to big flavor in half the time. The minute I tasted it I was flooded with memories and zero guilt! Win win!! Did I miss my home smelling like love all afternoon? Nope! That would’ve been too tempting. Take the pressure off by putting the pressure on! The end!

WONDERFUL!!! My 6 yr old grandson couldn’t get enough, even the carrots, and he is a VERY picky eater!!!
My favorite part of pot roast has always been the carrots, and these lived up to my expectations! The meat and sauce are also very good. This will go into my rotation of favorite foods.
Next time I think I will add some onions. I see them in the picture even though they aren’t in the recipe, and I think that would be a nice addition.
