Parmesan & Thyme Chicken with Mushrooms
Mushrooms are totally a food controversy. I love using the phrase #foodcontroversy in our house. (Do hashtags work on blogs? I mean, they work everywhere else right?!) Food controversies are so fun to me. People feel very strongly about the foods they love or they hate.
Cottage Cheese.
Cilantro.
Avocado.
Sour Cream.
Basically any kind of fish.
So here we go with another #foodcontroversy (it has to be trending by now). Mushrooms! I’ve already had requests to STOP posting so many recipes with mushrooms. I just can’t be held down.
And this one is awesome- especially with the fresh thyme. Don’t be tempted to skip that ingredient. It’s worth it. Also, the parm cheese makes the chicken seem like it’s breaded. Yumz!
Parmesan & Thyme Chicken with Mushrooms
Ingredients
- 1/3 cup grated parmesan cheese
- 1 lb chicken tenderloins
- 1/4 tsp each salt & pepper
- 2 tsp olive oil
- 2 tbsp fresh thyme leaves
- 1 lb sliced mushrooms, chopped
- 1/2 cup chicken broth
Instructions
- In a shallow dish toss chicken with parmesan cheese until coated. Spray a medium size skillet with cooking spray and put on medium high heat.
- Add chicken and brown both sides until cooked through (about 3 minutes each side.) *You may want to do this in batches to avoid overcrowding the skillet.
- Set chicken aside and cover with foil. Add olive oil to the pan.
- Add chopped mushrooms and thyme. Cook until soft, about 5 minutes.
- Add chicken broth. Cook until reduced by half (about another 3 minutes) and sprinkle with salt and pepper.
- Serve chicken with mushroom mixture on top.
Steph – wanting to order a third week of recipes but was thinking 3rd actual week was 6 different burgers? Am I right – are we on 4th week of recipes today? Can we see names of recipes before ordering week – or is this too picky? Made first two weeks of recipes, with maybe 1 -2 exceptions but am hamburger’d out for a bit with family this week.
