The time has come when I start to grow tired of stews and chills and start to daydream about the summer nights of grilled meals. Also, my propane tank is out and I haven’t felt like replacing it yet. I decided it was time for a new bun-free burger to make on my stovetop.

This recipe is easy to get together and provides quite a bit of flavor. If you’ve had weight loss surgery including Gastric Sleeve, Gastric Bypass and Gastric Banding, these are the kinds of recipes you like to keep on file. One batch will last you quite a while but the flavor will keep it exciting for at least a few days :) Remember to take bites the size of a black bean and eat slowly, avoiding beverages while you eat and for the hour afterwards. Southwest Stuffed Burger

Ingredients

  • 1 lb 93% lean ground beef
  • 1 egg
  • 3 tbsp fat-free mayo
  • 1 package taco seasoning
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 1/4 cup salsa of choice, divided

Instructions

  • In a mixing bowl combine ground beef, egg, mayo and taco seasoning. Mix until well combined.
  • Heat a grill pan to medium and spray lightly with cooking spray. Separate the meat into 8 thin patties.
  • In a separate small bowl, combine reduced fat cheese and salsa. Divide evenly on 4 of the patties. Top those patties with the other 4 and seal the sides.
  • Add beef patties to the pan (in batches if necessary) and cook on each side about 5 minutes or until no pink is showing. The temp of the beef should be 155F.
  • Slice up a tomato or other toppings as desired and serve with a vegetable side dish.
