Spicy, Sweet & Sour Grilled Chicken

I found this original recipe on Pinterest and modified it only slightly to become bariatric friendly. One of my favorite foodie websites is Epicurious which is where this recipe first originated.

This recipe will take more time than most of the recipes I share. In fact, I made the sauce the day before so I could have it ready to go for dinner the next night. The bulk of the time is making the sauce and letting it simmer. Once I had it created and in the fridge, all I had to do the for the dinner that night was grill the chicken and baste it with the sauce!

While you can make this all in one night, I recommend going the prep beforehand :) For the sweetener, I used Swerve.

Spicy, Sweet & Sour Grilled Chicken

Ingredients

  • 1 cup water
  • 6 oz tomato paste
  • 1 cup soy sauce
  • 1 cup distilled white vinegar
  • 3/4 cup natural no calorie sweetener ex: Truvia or Swerve
  • 1 medium onion minced
  • 1 jalapeno minced
  • 8 cloves garlic minced or pressed
  • 1 lb boneless skinless chicken breast

Instructions

  • Sauce- Stir together water and tomato paste in a sauce pan on medium heat. Then stir in remaining ingredients (soy sauce, vinegar, sweetener, onion, jalapeño, garlic).
  • Bring the mixture to a boil, stirring, then reduce heat and briskly simmer, stirring occasionally, until sauce is reduced. Plan for 60 minutes. (Place in a sealed container for the fridge if making chicken the next day.)
  • Chicken - Heat an outdoor grill. Brush both sides of chicken with sauce and place on grill. Grill chicken four minutes per side, basting with sauce each time you turn. Continue until chicken is cooked through and temp reads 165F (estimated 20 minutes)."
