I love mini sweet peppers. I always pick up a bag at Aldi and keep them on hand for a crunchy treat! This simple meal using taco meat is a perfect marriage of lean protein and low-starch veggie. It’s one of our favorites!

Sweet Pepper Poppers

Ingredients

  • 1 bag mini sweet bell peppers, halved and seeded
  • 1 lb 93% lean ground turkey
  • 1 package taco seasoning
  • 2 tbsp chopped cilantro
  • 1/2 cup 2% shredded cheddar cheese
  • salsa for dipping

Instructions

  • Preheat oven to 350 F.
  • Meanwhile, brown the ground turkey and add taco seasoning per package instructions.
  • Spread bell pepper halves in a single layer on a cookie sheet. Spoon ground turkey evening between pepper halves.
  • Sprinkle cheese evenly over tops. Place in heated oven for 5 minutes.
  • Let cool slightly and remove to serving plate. Sprinkle with cilantro and serve with salsa.
