I love sautéed mushrooms. So much so, when I am making something with mushrooms…I usually double the portion since they cook down so much! Note: I posted this recipe with the traditional amount of mushrooms, but personally doubled it.

Sautéed mushrooms + grilled flank steak is a friend of mine. I sliced the meat thin to help with small bites and slower eating. If you’ve had weight loss surgery, remember you will fill up much faster on steak than on other, less dense meats. Pay extra close attention to your bite sizes and your speed. Stop at the first sign of fullness. Oh, and enjoy!

  • cooking spray
  • 1/4 tsp each salt and pepper
  • 1 lb sliced mushrooms
  • 1 small yellow onion, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 cup beef broth
  • 1 1/2 lbs flank steak

  • Heat a skillet to medium-high heat. Spray well with cooking spray and add mushrooms. Sprinkle with salt and pepper and cook for about 10 minutes or until soft.
  • Stir in onion and thyme and cook for about 2 minutes. Add beef broth and reduce heat to simmer for 5 minutes.
  • Using a grill or grill pan, cook the steak for about 12 minutes- turning once. Or until desired doneness. Remove from heat, let rest for a few minutes. Thinly slice the meat against the grain.
  • Spread sliced steak on a plate, top with mushroom sauce and serve.
