Miniature meatloaf using spinach and feta for new flavors to a classic dish

I know, shock of all shocks. I created another meatloaf recipe! If you have been around here much, you may have noticed a meatloaf recipe or two :)

It was only a matter of time for another one really. I just can’t help myself! There is something about having meatloaf and green beans at home with my husband that tells me “it’s a great day.” And why would I deprive myself of a good day?? I mean, come on.

Just a handful of other meatloaf recipes: French Onion Soup Meatloaf. South of the Border Meatloaf. Teriyaki Meatloaf. Mini Zucchini Meatloaf. Cajun Style Meatloaf…the list goes on. Just search “meatloaf” in the top right and corner and you’ll be busy for hours.

Meatloaf is a great meal for weight loss surgery patients. If you’ve had Gastric Sleeve, Bypass or Band surgery, you might agree. I don’t use any starch – rather I substitute grated parmesan cheese instead of crackers or breadcrumbs. Pair it with a veggie and enjoy!

Spinach and Feta Stuffed Meatloaf

Ingredients

  • 1 lb 93% lean ground turkey
  • 1 egg plus 1 egg white
  • 1/3 cup reduced fat grated parmesan cheese
  • 2 tbsp light Balsamic Vinaigrette dressing
  • 1/2 tsp each salt and pepper
  • 2 cups fresh spinach, chopped
  • 3 oz light feta cheese crumbles

Instructions

  • Preheat oven to 350F.
  • In a medium bowl mixed ground turkey, 1 egg, parmesan cheese, dressing and salt and pepper. Mix continuously until it feels well combined. Take 2/3 of the mixture and form 2 loaves in the bottom of a casserole dish or in a muffin pan for single serving meatloaves, makes 10 (pictured).
  • In a small bowl combine chopped spinach, feta cheese and egg white. Mix until well combine. Create a well in the loaves and divide the spinach mixture into each. Top each loaf with the remaining meat mixture and "seal" the sides.
  • Bake meatloaves for 25 minutes for muffin pan size and 30-35 minutes for two loaves. Verify the internal temperature reads 165F. Allow to cool slightly and serve.
