Crockpot WLS Recipe

If you’ve had bariatric surgery (Gastric Sleeve, Gastric Bypass, Duodenal Switch or Gastric Banding)….you might be terrified of steak.

Something so dense and heavy like beef can be intimidating to new post-ops and older post-ops may shy away from dense foods that hit their stomach harder.

But it’s the {lean} solid protein sources that are the best for weight-loss after surgery. Why? Dense protein takes the longest to digest and move through the stomach. This means you are full for longer! Compare that to something soft or high in carbs…you can eat more of those foods and get hungry more often.

But there’s a key to doing well with beef….

It’s all in the bite.

Oh yeah. The size of the bite you take is 95% the answer to tolerating it well.

The opening into your stomach pouch is so small and that dense protein in the steak has not yet been digested (outside of the “mechanical” digestion in the mouth…so chewing is certainly important too!) Compare that to a carbohydrate and not only is that food much softer, it’s already been a digested some in the mouth thanks to enzymes in your saliva. Not true for protein.

More good news about this recipe! Cooking steak on low heat in a moist sauce makes it more tender and easier to tolerate.

While we use lower calorie ingredients in the sauce like fat-free cream of mushroom, the other good news is that you don’t each much of the sauce itself. It helps to moisten the meat but you don’t actually consume all the calories in the sauce when you toss most of it! I know it sounds crazy to add gravy but the packet itself provides flavor without the fat of a prepared gravy.

Pair this lean protein source with your favorite low carb vegetable like these Sautéed Garlic Snow Peas (members recipe) or this Roasted Parmesan Broccoli . You can also steam carrots and add to the bowl as I did in this photo!

Tender and flavorful stew meat with few ingredients and few steps to make in the slow cooker.

Ingredients

  • 1 lb lean stew meat
  • 1/2 (10.75 oz) can fat-free cream of mushroom soup
  • 1 (0.87 oz) packet brown gravy seasoning mix
  • 1 cube beef bouillon
  • 4 oz water
  • 1 small onion, chopped **Optional
  • steamed carrots **Optional, added to the bowl after steak is cooked

Instructions

  • Line a slow cooker with a liner bag for easy cleanup.
  • Combine all the ingredients inside the bowl of the lined slow cooker. Cook on high for 4 hours or on low for 6 hours. *Note: If you notice your food cooking faster or seeming over-cooked, take an hour off the cooking time.

  1. This recipe sounds delicious! The picture shows carrots though. Do you cook them separately then mix together to eat?
