Fresh flavors is what it’s all about in the summer. This is my first summer to grow basil and I feel like an absolute green thumb wiz but let’s not talk about the other 5 herbs I planted….

Tossing together this pineapple salsa is a breeze and the flavor is just wonderful. Make plenty and save it for another night to add to your taco salad, baked chicken or grilled steak!

Tilapia with Pineapple Salsa

Ingredients

  • 4 tilapia fillets, thawed if using frozen
  • 2 tsp ground cumin
  • 1/4 tsp cayenne powder
  • 1/2 cup chopped pineapple
  • 2 tbsp cilantro
  • 1/2 jalapeño, seeded and chopped (optional)
  • 3 tbsp fresh lime juice
  • 1/2 cup diced red onion
  • 1/4 cup fresh basil, sliced

Instructions

  • Heat oven to 350F.
  • Combine cumin and cayenne together and rub on tilapia fillets. Set in the bottom of a casserole dish and bake for 25 minutes or until flakey.
  • While tilapia is baking, combine pineapple, cilantro, jalapeño (if using), lime juice, red onion and basil. Set aside.
  • Remove tilapia to serving plates and top with pineapple salsa.

  1. I used orange roughy and Lane grilled it along side his marinated salmon concoction. Yes we had 2 completely different meals ha. We did share grilled veggies.

    My filet was quite large so I had leftovers for lunch. I put it on top of chopped cabbage and kept it cold. AMAZING!!

    Next time we have fish tacos I will make this and not be tempted by tortillas!
