Bariatric surgery patient or not, having recipes that bring FLAVOR into your meals is so important to staying on track with a lower carbohydrate lifestyle. That’s why I love throwing together fresh salsas!!

I use a lot of cherry tomatoes to put together salsa or fresh tomato toppings for chicken, beef or pork. I’ve also been known to throw the leftovers into my eggs in the morning!!

I’ll include a couple of my favorite salsa or tomato relish recipes below BUT FIRST I have to highlight this very recipe we are here to talk about :)

A Tropical approach to a tomato salsa using watermelon and mango alongside tomato, red onion, cilantro and lime juice. Does it sound crazy? Or like an amazing idea?? Try it and I think you’ll see why I feel it’s the later!

To cut down on prep time, I bought pre-cut mango and watermelon. I didn’t want a whole watermelon in the house and I didn’t want to cut an entire watermelon to make my salsa. Although, I will keep this recipe in mind the next time I have leftover watermelon (which will likely be next summer. Bye bye summer.)

You can also change this recipe up by substituting pineapple or even peach.

Be mindful of the amount of fruit you use as it can quickly increase the carbohydrate count in the recipe.

I use this as a topping to a lean protein or eat it with sliced cucumbers or bell peppers to avoid using chips.

Ingredients

  • 1 cup heirloom cherry tomatoes, diced
  • 1 cup chopped seedless watermelon
  • 1 medium mango, diced
  • 1/3 cup red onion, chopped
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp fresh lime juice

Instructions

  • Combine all ingredients in a medium bowl and refrigerate until ready to serve.
  • Recommend enjoying with fresh vegetables or as a topping to chicken, pork, fish or steak.
