A traditional stuffed pepper recipe with cauliflower rice instead of white rice and tossed in a skillet instead of baked in the oven. Bariatric friendly recipe.
1cupcauliflower ricemicrowaved per package instructions
1smallonionchopped
1lb93% lean ground beef
3clovesgarlicminced or pressed
14ozdiced tomatoesdrained, 1/4 cup juice reserved
1/4cupketchup
saltto taste
black pepperto taste
3ozmozzarella cheeseshredded, optional
Instructions
In a large deep skillet, spray with olive oil or cooking spray and add chopped onions and peppers. Cook, stirring occasionally until softened, about 4 minutes.
Add ground beef and cook, breaking beef into small pieces until no pink, about 4 minutes. Drain if needed.
Add garlic to the meat mixture. Cook about 30 seconds. Add microwaved cauliflower rice and drained tomatoes.
In the reserved liquid from the tomatoes add 1/4 cup ketchup and stir to combine. Add to the skillet and mix well. Season with salt and pepper to taste.
