Stir everything together in a small bowl until well combined.
Line a mini muffin pan (or ramekins) with foil and spray with cooking spray. Use a cookie scoop to divide mixture evenly into the wells of mini muffin pan.
Place muffin tin in freezer for at least 4 hours or until frozen. Remove and let thaw a few minutes for softer texture.
