2tbspfinely chopped jarred roasted red pepper* may need to omit based on your program
2tbspchicken broth
1tbspunflavored protein powderhalf a scoop
Instructions
Add black beans, 2 tbsp enchilada sauce and red pepper to a small sauce pan and heat over medium heat.
Add broth.
Use a hand blender to blend ingredients well. OR move to a blender and blend well.
Transfer bean puree´ to a bowl. Allow to cool a moment and add protein powder and another 1/2 tsp enchilada sauce. Serve.
Notes
*This recipe is higher in carbohydrates than protein (due to the nature of beans) which is not typically recommended, however, is appropriate during the pureed and healing phases of the diet. Outside of this diet phase it's best to pair this recipe alongside a higher protein entree. Adding more protein powder will make a gritty texture.
