Place rinsed black beans in a small sauce pan over medium heat. Add enchilada sauce. Stir and heat throughout, about 2 minutes. Add chicken broth.
Move mixture to a blender or using a hand blender, blend mixture until smooth. Move to a bowl.
Let cool slightly and then stir in unflavored protein powder until blended in well. Drizzle 1 tsp enchilada sauce over top. Serve.
Notes
This recipe makes one serving that is roughly one ounce. Note: Traditionally it is recommended for protein to be higher than carbohydrates which this recipe does not fit due to the carbohydrate nature of beans. However, during the healing phase of the diet, beans are a wonderful way to progress back to protein sources with more texture. After the pureed phase of the diet, it is recommended this recipe be paired with another protein and used in very small portions such as drizzled over eggs.
