1 lbcooked chicken breast, dicedseveral quick ways to cook the chicken, but I use my Pampered Chef® covered baker in the microwave
5stripsturkey bacon, diced
1/2cuplow-fat mayo
1/4cupfat-free sour cream
3ribscelery, diced
1/2cup2% cheddar cheese, shredded
3green onions, sliced
salt and pepper to taste
Instructions
Choose a quick method to cook the chicken breast. Meanwhile, dice all other ingredients.
Let chicken cool and add all ingredients to a large bowl. Mix well and serve.

This recipe is modified from this original recipe for "Loaded Chicken Salad" from The Pinning Mama. Recipe was modified to decrease fat content and be made more suitable for the post-op diet.
