Ingredients

zucchini
1
egg, beaten
1/2

each salt and pepper
3/4
cup
reduced fat grated parmesan cheese
Instructions
Rinse and pat dry zucchini. Cut off ends of zucchini. Place a cheese grater over a medium bowl and grate zucchini on the cut side for shorter strands.
Add remaining ingredients to the bowl and mix well. Heat a large griddle plan to medium to medium-high heat.
Scoop 1/4 cup zucchini mixture onto preheated skillet and flatten with a spatula. Flip when bottom looks like it's beginning to crisp.
Cook another minute on the other side. Serve alongside chicken, fish, pork or beef.
