1lbboneless, skinless chicken breast, cooked and chopped
2largezucchini squash, spiral cut or julienne peeled
2tbspred bell pepper, chopped
1 1/2tspreduced fat grated parmesan cheese
1/2cup0% fat, plain Greek yogurt
2tbspbuffalo wing sauce
3tbspunsweetened canned pumpkin puree
1/2tspground mustard spice
1/4tspgarlic powder
1/3cup2% cheddar cheese, grated
Instructions
Preheat oven to 400F. Spray a 8x8 casserole dish with cooking spray.
In a sauce pan over medium heat, combine Greek yogurt, hot sauce, pumpkin puree, ground mustard, garlic powder and parmesan cheese. Melt ingredients together and mix to combine. Remove from heat.
Place zucchini noodles in a bowl and press down with a paper towel to remove excess moisture. Spread in the bottom of a casserole dish.
Place chopped cooked chicken on top of zucchini noodles.
Spoon on the buffalo sauce over the top and bake for 30 minutes. Remove from oven, let cool and serve.
