Season pork with salt and pepper. Heat a large skillet to medium high heat, spray with olive oil and add pork chops. Cook approximately 4 minutes per side or until internal temperature reaches 145F. Remove pork from skillet and cover with foil to keep warm.
Re-spray skillet and add onions, apples and garlic. Sauté together about 4-5 minutes, stirring occasionally.
Meanwhile, combine sweetener, cinnamon, thyme and water together. Add to apple mixture. Stir to combine and let cook 2 minutes longer.
