1lbboneless, skinless chicken breast Pound out thickness if needed (1/2 inch ideal)
1 1/2tspfajita (or taco) seasoning
cooking spray
1 1/2cupsgreen/red bell pepper strips
1mediumpeach, cut into strips
Instructions
Sprinkle both sides of chicken with fajita/taco seasoning. In a large skillet coated with cooking spray, cook chicken over medium heat for 12 to 14 minutes or until tender and no longer pink. Transfer to a plate; cover and keep warm.
Re-coat the skillet with cooking spray. Add bell pepper strips and cook until crisp-tender. Add peach slices and gently stir; cook for another 2 minutes. Spoon over chicken.
