Shred kale and add to large bowl. Sprinkle with salt and massage for a minute (makes kale softer). Add cole slaw mix and parmesan cheese and toss.
Meanwhile, heat a skillet to medium-high heat. Season shrimp with salt and pepper and toss with lemon juice. Spray pan with cooking spray and add shrimp. Cook on each side approximately 2 minutes or until cooked through (no longer transparent).
Add shrimp to kale mix. Add light caesar dressing and toss to combine. Serve.
