Turkey Sausage & Bell Pepper Egg Cups

Ingredients
1/2
lb
turkey sausage crumbles
1
green bell pepper, chopped
1
red bell pepper, chopped

eggs
or 8 large eggs
1/2

2% cottage cheese
1/2
cup
2% cheddar cheese
Instructions
Preheat oven to 350F.
Whisk eggs together. Stir in cottage cheese. Add bell peppers, turkey sausage and cheddar cheese.
Spray a muffing pan generously with cooking spray. Pour in egg mixture- about 3/4th of the way full.
Bake for 30 minutes. Remove from muffin pan immediately, then allow to cool 3-4 minutes before serving.
