Ingredients

chopped fresh mushrooms

medium
onion, finely chopped

light balsamic vinagrette dressing

clove
garlic, minced or pressed

tsp
fresh thyme, chopped
1

boneless, skinless chicken breast
butterfly chicken if more than 1/2 thick
1/2
cup
2% shredded mozzarella cheese
Instructions
Cook mushrooms and onions in a large nonstick skillet; stirring occasionally, until onions are translucent.
Add dressing, garlic, thyme and cook for 5 to 7 minutes. Remove from pan and keep warm.
Add chicken breast to skillet and cook on each side 5-8 minutes or until done (165F).
Top chicken with mushrooms mixture and shredded cheese; cover. Cook 2 to 4 minutes until cheese is melted.
