Ingredients

rotisserie chicken, skin and bones removed and meat diced

hard boiled eggs, chopped

stalks
celery, chopped
1/3
cup
fat-free mayonnaise

tbsp
sweet pickle relish

tsp
each salt and pepper

large
cucumber, sliced
Instructions
Mix all ingredients together. Adjust ingredients to taste.
Spoon one tablespoon on each cucumber slice.
Save remaining chicken salad by sealing and refrigerating. Good for up to seven days.
Notes
If fat-free mayo is unavailable, look for light mayo. You could also do half mayo and half plain Greek yogurt.
