Broccoli Salad
I love the fresh crunch and slightly creamy texture of this broccoli salad. A few ingredient swaps help this broccoli salad remain lower in sugar and fat than a traditional recipe.

Ingredients

broccoli crowns
cut large pieces into smaller pieces

cups
broccoli slaw
bagged
1/2
apple
diced

slices
turkey bacon
cooked, diced
1/2
cup
pepitas
or sunflower seeds
1/2

Greek Yogurt
plain, 0% fat
1/4
cup
mayo
light
1/4
cup
pomegranite vinegar
or apple cider

Instructions
Add broccoli crowns and bag of slaw to a large bowl. Use kitchen shears to chop down any large pieces.
Add diced apple, turkey bacon and pepitas
In a small bowl mix the mayo, Greek yogurt, vinegar and stevia packets. Pour over slaw mixture and mix well.
