In a shallow dish toss chicken with parmesan cheese until coated.
Spray a medium size skillet with cooking spray and put on medium high heat.
Add chicken and brown both sides until cooked through (about 3 minutes each side.) *You may want to do this in batches to avoid overcrowding the skillet.
Set chicken aside and cover with foil. Add olive oil to the pan.
Add chopped mushrooms and thyme. Cook until soft, about 5 minutes.
Add chicken broth. Cook until reduced by half (about another 3 minutes) and sprinkle with salt and pepper.
