  2. These look good. I think they might be dinner tonight with roasted spaghetti squash or a small side salad. I wonder if I could use the light jarred alfredo sauce on them for a different take as well.

I just had my gastric bypass surgery 2 weeks ago and I’m having a really hard time so I’m glad to see that you have found foods that we can eat I can’t wait to try some I’m on my soft food diet right now but I can’t wait to get to the regular diet so that way I can eat whatever I want while on a diet plan obviously. My anxiety is through the roof but maybe with these recipes it will be a little bit easier so thank you.

  5. Hi! I have not come across a bad recipe on your website, Steph! They are all sooooo gooooood! Question about this one (my family adores meatloaf too!): is the muffin pan a mini muffin pan or a regular sized one?
