Easy Skillet Frittata - Bariatric Friendly Meal

Ingredients

  • 2 links pre-cooked chicken sausage chopped
  • 1 orange bell pepper chopped
  • 1/2 cup baby spinach chopped
  • 4 eggs whisked
  • 1/4 tsp each salt and pepper

Instructions

  • Heat oven to 350 F. Heat an eight inch skillet to medium high heat.
  • Add two links of chicken sausage, chopped. Add one orange bell pepper (other colors okay), chopped. Saute sausage and pepper for two minutes.
  • Add half cup chopped spinach. Cook 2 more minutes. Remove toppings from skillet and cover to keep warm. Wipe the skillet clean.
  • Return skillet to heat and add 4 whisked eggs. Season with salt and pepper. Cook eggs until edges are set. Sprinkle sausage mixture over top.
  • Move skillet to oven and bake 10 minutes. Remove from oven, using oven mit. Move from skillet to cutting board. Allow to rest 1-2 minutes. Cut and serve.
