Can you tell I enjoy meatloaf?! If it has turkey bacon or meatloaf in the title- I’m a sucker for it. Mini meatloaves are even better because they cook fast and not as messy as cutting into a regular meatloaf.
These cups came out even better than I had thought. Kevin even said it was TOP FIVE material- this is big people.
I promise I’m branching out of the world of meatloaves. On occasion.

Ingredients
- 1 lb 93% lean ground beef
- 3/4 cup crumbled low fat blue cheese
- 1/2 cup diced onion
- 1/2 cup grated parmesan cheese
- 1/2 cup chopped fresh spinach
- 2 eggs
Instructions
- Preheat oven to 375 and spray a muffin pan with cooking spray.
- Combine ground beef, blue cheese, onion, parmesan cheese, spinach and eggs. Divide mixture evenly in muffin pan cups.
- Bake for about 30 minutes or until no longer pink inside.

Steph, Do you post the nutritional info for your recipes? I find I make better food decisions throughout the day when I know my daily calorie “allotment.” That way I never feel like I have to deny myself a tasty treat, I just make sure it’s in my plan for the day.

Good question! I don’t list them on my recipes for a couple reasons. That being said…I do recommending using Myfitnesspal (either website or phone ap) to determine nutritional breakdown if that works best for you!
I am cooking my meatloaf muffins right now. I didn’t go off of this recipe for it though, I went off of your Italian Meatloaf recipe. I’m bulk cooking for the rest of the week so I don’t have to do this every night. I’m excited about these. I can just take a muffin with me when I leave in the morning and my lunch is ready wherever I end up around that time. So so glad you are feeling good enough to be back and work and to be cooking up these recipes.

@Felicia yes it is low sugar ketchup! To be honest, it was just to make the picture a little more appetizing. Meatloaf on it’s own can look a little meh… :) It didn’t need it for taste but was good with it too!
