Simple Italian Stuffed Peppers

This is one of the most straight forward recipes I’ve ever used for stuffed peppers. As the time has come for it to turn dark super early, I find myself feeling tired when it’s time to make dinner…for no good reason. I shouldn’t be any more tired, it’s only because it’s dark out and my brain thinks I’m cooking at 9pm!

So I just threw the ground turkey in the pan with some sauce and seasoning, then baked it for 15 minutes in the bell pepper. I remember thinking to myself “this probably won’t be as good because I rushed it…” but I was either super hungry or super wrong! I think it was both.

This is a great meal for weight-loss surgery patients. You can get a little bit of vegetables in with your protein but it’s all within one meal! I was able to eat leftovers for a few days and I haven’t had Gastric Bypass or Gastric Sleeve surgery :)  Plenty of flavor for not much work. My cost per bell pepper half was $1.05…not too shabby!

Simple Italian Stuffed Peppers

Servings: 6 pepper halves

Ingredients

  • 3 green bell peppers, seeded and cut in half
  • 1 lb 93% lean ground turkey
  • 1 cup low sugar marinara sauce lowest sugar available
  • 2 tbsp Italian seasoning
  • 2 tbsp shredded low-fat mozzarella for topping

Instructions

  • Heat oven to 350F.
  • Brown the ground turkey, add seasonings and stir until cooked. Add marinara sauce and stir to combine.
  • After bell peppers have been seeded and cut in half, place on a cookie sheet or baking pan. Scoop meat mixture into the bell peppers halves.
  • Bake at 350F for 15 minutes or longer if you like softer bell peppers. Remove from the oven and sprinkle shredded cheese. Let cool slightly and serve.

    I love stuffed peppers but have been avoiding them because of the amount of rice usually in the mix. These peppers were very flavorful and easy to make. They were filling without the rice! Great recipe that will become one I make often.
