Simple Italian Stuffed Peppers

These Italian Stuffed Peppers really are SO simple! Packed with protein, low in carbs (no rice) means they fit perfectly in the Gastric Sleeve or Bypass Diet! #gastricsleevediet #gastricbypassdiet #gastricsleeverecipes #gastricbypassrecipes #norice

This is one of the most straight forward recipes I’ve ever used for stuffed peppers. As the time has come for it to turn dark super early, I find myself feeling tired when it’s time to make dinner…for no good reason. I shouldn’t be any more tired, it’s only because it’s dark out and my brain thinks I’m cooking at 9pm!

So I just threw the ground turkey in the pan with some sauce and seasoning, then baked it for 15 minutes in the bell pepper. I remember thinking to myself “this probably won’t be as good because I rushed it…” but I was either super hungry or super wrong! I think it was both.

This is a great meal for weight-loss surgery patients. You can get a little bit of vegetables in with your protein but it’s all within one meal! I was able to eat leftovers for a few days and I haven’t had Gastric Bypass or Gastric Sleeve surgery :)  Plenty of flavor for not much work. My cost per bell pepper half was $1.05…not too shabby!
