Simple Sauteed Zucchini Squash

Simple Sauteed Zucchini Squash

  • 2 zucchini, cut into bite size pieces
  • cooking spray
  • 1/4 tsp each salt and peper
  • 1 tsp lemon juice (optional)


  • Heat a skillet to medium-high heat; coat well with cooking spray.
  • Toss together zucchini, salt & pepper and lemon juice. Add to skillet.
  • Saute squash for about 8-10 minutes, stirring and turning sides on occasion. Squirt a small amount more of lemon juice if desired; salt and pepper as desired too.


*Pair this recipe with a protein based entree.

OK Steph (your Mom’s friend from Louisville here) – tried 4 of six recipes from week one plus grilled shrimp patties and romaine from last week – we’re out of town for several days so I was wanting to skip a week of recipes and play catchup – loved having great choices, shopped food list and groceries in house and no old put-togethers or pizza last minute. I’m sold. Thank you!
