Chicken Breast with Tomato & Basil Queso
An all time favorite recipe at our house
This bariatric friendly recipe is fast, simple and OH so tasty.
The original version was found in a Kraft Foods Magazine years ago. I adapted it to cut on fat content but couldn’t tell you what it was that I adapted anymore.
This recipe is now so second nature to me (I no longer wonder when the tomatoes are overcooked and if this is going to be any good).
The creamy texture will make you feel like you are breaking major rules here. Alas! It’s rich in protein which will fill you up and keep you full. The sauce on top is so flavorful it will help you feel like you don’t just eat chicken all the time (even if you are eating chicken).
Take small bites (think black bean), eat slowly to identify fullness and keep from over-doing the portion size.

Chicken Breast with Tomato & Basil Queso
Ingredients
- 2 tbsp Light Italian Dressing
- 1/2 cup onion, chopped
- 3 cups cherry tomatoes
- 1 tbsp garlic, minced
- 1 cup shredded 2% mozzarella cheese
- 1 lb boneless, skinless chicken breasts
- fresh basil chopped, if desired
Instructions
- Heat large skillet to medium high heat. Add dressing, onions, garlic, tomatoes and heat for 8-10 minutes.
- Add cheese and stir until melted. Remove mixture and cover to keep warm.
- Spray skillet with cooking spray and cook chicken breast on both sides until cooked through. Add cheese mixture on top and serve with fresh basil. (Sometimes I don't have it!)
Where does the basil come in at?!
It’s totally misleading, right?! The basil is in the Italian dressing. You could totally add fresh basil though! It just sounds like a Mexican dish if I call it “chicken with tomato queso” ;-)
