Barbecue Meatloaf

Oh yes I did. I grilled last night’s meatloaf. If you have followed me at any point in time- you likely noticed my love for meatloaf. You can do it so many different ways! When the caterer at our wedding mentioned meatloaf…done deal. If it was the main entree at our wedding, you now know my deep, deep love for meatloaf. The word loaf can be a little unappetizing. So unfair…because it is anything but UN-appetizing!

If a mother knows her daughter well, she will know these types of loves. So what did my mom do? She bought me a Steel Grill Perforated Meatloaf Pan – yes…a meatloaf pan for your grill. Be still my heart.

The pan I was given is from Williams-Sonoma but I also noticed a different one through Amazon.Brinkmann Smokeshop Meat Loaf Basket for Grills and Smokers 400-0073-0
It may not be unreasonable to believe a grill basket could get the job done. The loaf may want to change shapes though, so perhaps making some foil “barricades” around it would keep it a nicely formed loaf.

One big recommendation I have for grilling meatloaf, is to use a meat thermometer. I love mine- the probe can be left in the loaf and the attaching cord will allow you to put the magnetic face on the front of the grill. It beeps at you when it reads the correct temp. Which is Awesome.

Here’s a pic of my thermometer…also available through Amazon.Taylor 1470 Digital Cooking Thermometer/Timer

Here is the recipe for a Barbecue Meatloaf. I imagine you can grill any sort of meatloaf, but I decided to start with barbecue. I also included instructions for making it in the oven! Note: I use the lowest sugar barbecue sauce I can find…and often order Kraft’s online if I can’t find one in the store. Ingredients

  • 1 lb 97% lean ground beef or ground turkey
  • 1/2 cup reduced fat grated parmesan cheese
  • 1/2 cup barbecue sauce (low sugar- see above)
  • 1 egg, beaten
  • 1/2 cup chopped onion
  • 2 tsp liquid smoke
  • 1 tsp grill seasoning

Instructions

  • If baking meatloaf; Preheat oven to 375. If grilling, heat grill to medium high heat.
  • Mix all ingredients together- using only half of the barbecue sauce. Form into a loaf.
  • If baking- place in a loaf pan and place in oven for 45 minutes or until internal temp reaches 160F. Let stand 5 minutes and top with remaining 1/4 cup sauce.
  • If grilling- place in a grilling loaf pan (or grill basket) and put in center of grill. Close lid for 30 minutes or until internal temp reaches 160F. I recommend using a meat thermometer. Using a good oven mitt, remove from grill and let stand 5 minutes. Top with remaining 1/4 cup sauce.
