Jalapeño Popper Chili (No Beans)
For the month of December I enrolled myself in a wellness/weight-loss challenge. I needed a push to stay focused in the holiday months, and it seemed like a great way to stay motivated! More on that later. BUT, in effort to see weight-loss, I took my carb level down a bit more than my normal. Which means….chili Sunday no longer uses any beans.
This really wasn’t too difficult for me. I’ve been using double the meat and no beans and feeling even more filled with my meals. If you are looking to see that scale move a bit more, take things to the next level and omit beans from your diet. This may not be a permanent change for you, but just to see some added success in your journey.
With this Jalapeño Popper Chili, I can truthfully report I didn’t miss anything. It was delicious. Mr. W was undoubtedly in agreement with me.
The Laughing Cow Cheese® will likely not melt easily in your chili, so instead use the spoon to stir it well until the pieces break up into very small bites. This incorporate a yummy cheesy bite into your chili on occasion. The Greek yogurt, on the other hand, makes the chili a bit more creamy as a whole. VERY FILLING meal and packed with flavor!!!
Jalapeño Popper Chili (No Beans)
Ingredients
- 3 jalapeños, seeded and diced
- 1 small red onion, diced
- 2 cloves garlic, minced/pressed
- 1 lb 90% lean ground turkey
- 1 (14.5 oz) can fire roasted tomatoes
- 4 trianges The Laughing Cow Cheese® Queso Fresco Chipotle other flavors are suitable
- 1/3 cup 0% fat, plain Greek yogurt
Instructions
- Heat a stockpot to medium high and add diced jalapeño, red onion and garlic. Cook about 2 minutes or until a bit softer. Add ground turkey and brown.
- Add roasted tomatoes and cook a few minutes longer. Add The Laughing Cow Cheese® and stir often breaking the cheese into tiny pieces throughout the chili- the cheese will not fully melt.
- Stir in Greek yogurt for a creamier texture.
