Great tasting and very easy to make.
Made these the other night but used ground turkey and added a small ball of baby mozzerella cheese to the center of each one. Took a while to find a low sugar Bar BQ sauce used Head Country Hickory Smoke it has just 4 gm of sugar per serving,

This may be a dumb comment but does the Greek yogurt get mixed in or is it a topping? I don’t see it in the steps?
Not dumb at all Sara – what’s dumb is that I’m sitting here reading the recipe and thinking “I put Greek Yogurt in this??”
I still can’t figure it out but I think when I was updating this recipe in a new recipe plugin I must have copy and pasted that ingredient in? It doesn’t belong!! I’m 99% sure I didn’t put Greek yogurt in it!!! LOL. I’m updating this recipe to exclude the yogurt but everything is should be good. I’m SO glad you commented!
I was wondering if the 29g of protein is in the 8 muffin size or the 12 mini muffin size
Hi Ana! The 29 grams of protein is for one serving…and this recipe makes 4 servings. If you make 8 muffins, then 2 muffins would make one serving (2 muffins = 29 grams protein). If you make 12 muffins, then 3 muffins would make one serving (3 muffins = 29 grams protein). Thanks for your message!
Thank you so much! Im hoping this helps me to eat a bit more protein. I’m having a lot of trouble getting my daily protein and water in. I’m only about 2 months out and my stomach doesn’t like much lol
Also, I subbed ground turkey since I’ve been having trouble with beef and it came out very wet so I added a toasted slice of a bread I bought that is made out of whey protein and only has 2 carbs
I made it last night. So good! Mine made 6 mini meatloafs. How many calories and protein etc in that. Thanks.
@Barbara I’m so glad you enjoyed them! The nutrition info is listed under “recipe notes” for the recipes here on FoodCoach.Me. This recipe, if prepared as listed above, will yield an estimated 29 grams protein, 7 grams carbohydrate and 15 grams fat per serving.
I’m seeing in the instructions to add bell pepper, but it isnt listed at all in the ingredients….
@Amy you’re absolutely right, thank you for finding my error! I’ve made them so many times and change it depending if I have any bell pepper :) I appreciate your comment and have updated the ingredients!
Do you have the calories calculated for this recipe? We had it for dinner tonight and it was amazing!
3 Mini Muffin cups would be an estimated 260 calories depending on the brands of ingredients used. (About 87 calories per mini meatloaf)
Could this be considered a pureed food?? Even if you throw it in the blender and blend it for a few seconds.
@Amanda M that’s a good question. Yes, you could blend it with warm beef broth as an option. You might run that by your dietitian as in my counseling I’ve never put patients on a pureed diet so there may be some variation on the approach. Best of luck in your pureed stage!

@Lanette Long if you make 12 mini meatloaves it is 3 per serving. If you make 8 medium meatloaves it is 2 per serving.
I have always put bread or crackers in my meatloaf. I see you do not? Does it hold deep together? I know bread is out but I thought maybe saltines. What do you think?
@Tony William Bump Great question! That is what the grated Parmesan cheese is for! It does the binding without the starch.

I made the mini meatloaves. Easy and tasteful, I put the topping on all of them except mine.
I didn’t have any low sugar ketchup and I am not a fan of bbq sauce.

Really good! I like the hidden veggies in the meatloaves. The texture is good, and the tomatoes kept it moist. I also like how quickly they cook. The only issue I had was cleaning the muffin tin afterward!
I have tried this using low sodium taco mix and a little bit of 1%milk instead of bbq sauce and it is delicious! Just a different approach on things for those that don’t care for red sauce as I’m having a hard time keeping anything with tomato based sauces down even 10 months out!
