You know what’s GREAT NEWS about fajitas?
They’re bariatric friendly!
Sure, you have to skip the tortilla and rice, but when the flavor is as good as this is…no problem.
I’ve always loved fajitas. When I started living out a low-carb lifestyle my first year as a bariatric dietitian, I was obsessed with the fact that I could have chicken, steak or shrimp fajitas and all the yummy vegetables that cook with the meat. I add salsa on top and that’s all I’ve foudn taht I need! I can truly say, 8 years in from making low-carb my life, I don’t even think of tortillas going with fajitas. I forgot that’s a thing!
There is more great news about fajitas. They are super simple to make at home. This time I made a really yummy rub and put on steak but again…change up the protein and you have a totally different meal! Shrimp or chicken would also work perfectly. I KNOW it looks like a lot of ingredients but 99% of you will have these in your pantry already. And if you don’t you can try skipping it but also give a new spice a try!
But Hey!
Because it’s steak, be sure and take tiny tiny bites and take your time. Take bites the size of a pencil eraser (seriously) and put your fork down in between each bite. Certainly take your time, but avoid going more than 30 minutes for one meal as it starts to flirt with more of a grazing pattern. The first bites on it’s way out and you’re still going. It’s easy to end up with a larger portion if you take too much time.

Sweet and Smokey Steak Fajitas
Ingredients
- 1 lb lean sirloin steak, cut into strips
- 1 tbsp sea salt
- 1 tbsp paprika
- 2 packets natural sweetener
- 2 tsp chili powder
- 2 tsp dried rosemary, crushed
- 1 tsp cumin
- 1 tsp black pepper
- 1/2 tsp mustard powder
- 1/2 tsp dried thyme
- 1 green bell pepper, cut into strips
- 1 onion, cut into strips
- salsa for topping
Instructions
- Combine all the spices in a small bowl. Reserve 1 tsp of mixture. Coat all sides of steak slices with spices. Cover and set aside until ready to cook.
- Add pepper and onion to a large skillet and sprinkle with 1 tsp reserved seasoning mixture. Heat to medium high heat and saute. Remove from pan and cover to keep warm.
- Add steak to skillet in batches and cook 2 minutes per side or until desired doneness. Remove from heat and serve with peppers and onions.
