Chicken Pesto Skewers
OMG I love Pesto. I mean, admit it. If you know what pesto is…and you see it on a menu…you instantly thing ooohhhh pesto. Instant temptation to order.
Trouble is- it’s often pesto pasta. And if you are anything like me, pasta makes me hungry for about 5 days. It’s still crazy to me that eating food creates hunger. Carbs = huuuuunnngry. And for me- pasta is the worst. Thus I have to create different dishes to provide the yummy pesto sans noodles.
Many pesto recipes can be complicated. Fresh basil- yes, I get that. I need fresh basil to get the true pesto taste. This way to create a fast pesto is awesome. Very fast and very few ingredients. We have Kraft Foods to thank for this idea. Toss this easy pesto with chicken and tomatoes and grill on a skewer. Delicious!

Chicken Pesto Skewers
Ingredients
- 3 tbsp jarred pesto
- 1 lb boneless skinless chicken tenderloin, cut into 1 1/2 inch pieces
- 2 cups cherry tomatoes
- 12 leaves fresh basil, optional
Instructions
- Heat grill to medium high heat. Toss jarred pesto with chicken and tomatoes until coated.
- Thread chicken and tomatoes alternatively onto skewers, incorporating 3-4 leaves of fresh basil to each skewer. (If using wooden skewers, be sure to soak for 30 minutes before using).
- Grill about 5 minutes per side until chicken is done.
