Oven Baked Steak Fajitas - Great for Postop Patients! VSG, RNY, WLS

I’m a sucker for an easy fajita recipe. I’ve made them in my microwave using my Pampered Chef Deep Covered Baker. I’ve made them in my Crockpot®. I’ve made them on the stovetop. And now….I’ve made them in the oven!

Steak, chicken, shrimp – pick your protein and go for it! I love the texture of bell peppers and onions and cooking them with the meat helps the meat to stay more moist. Plus – this ENTIRE MEAL was on one baking sheet! Helllooooo easy clean up!

Weight-loss surgery patients = focus on bite sizes with this one. Cut your steak up before you start eating and eat TWO bites of steak to everyone ONE bite of veggies. Enjoy some salsa or plain Greek yogurt for toppings.

Ingredients

  • 2 tbsp chili powder
  • 2 cloves garlic, minced
  • 3/4 lb sirloin steak
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1/2 cups store bought pico de gallo (optional)
  • 4 tbsp chopped fresh cilantro (optional)
  • 1 cup plain Greek yogurt (optional)

Instructions

  • Preheat the broiler. In a small bowl, mix together chili powder and garlic. Add pinch each salt and pepper.
  • On a rimmed baking sheet, rub the chili powder mixture into the steak and on the veggies. *You may want to spray with olive oil for mixture to coat evenly. Optional.
  • Broil, turning once, until the veggies are browned in spots and the meat is charred and cooked until desired doneness - about 10 minutes for medium rare. Remove from oven.
  • Loosely cover the steak with foil and let rest about 10 minutes before slicing thinly against the grain.
  • Serve steak and veggies with optional toppings: Pico de Gallo, cilantro, plain Greek yogurt.
