Cajun Seasoned Stuffed Chicken Breast

I got this recipe off a blog a long time ago and modified it a little. I really, really loved it and wish I could remember who I can give credit to for this great idea! I replace the breadcrumbs with parmesan cheese to keep the starch content down. Great way to change up the same ol’ chicken breast!

Ingredients
- 1 lb boneless, skinless chicken breast
- 1 cup fresh spinach leaves
- 2 oz shredded monterey jack cheese
- 2 tbsp Cajun seasoning
- 2 tbsp grated parmesan cheese
- 1/4 tsp olive oil

Instructions
- Pound chicken breast to 1/2 inch thickness.
- Mix spinach and shredded cheese in a separate bowl.
- Put spinach leaves in the inside of chicken breast and roll up, securing with toothpick.
- Mix grated parmesan cheese and Cajun seasoning together. Put a small amount of olive oil on the chicken breast and spread with fingers. Coat the chicken breast with seasoning mixture.
- Cook chicken for 30 minutes in an oven preheated to 350 F.
